Try this simple summer salad

Did you buy a large watermelon and have some extra? Try this very simple salad. It’s refreshing and colorful and perfect on a hot day!

 Watermelon and Feta Salad 

Ingredients

  • 6 cups cold watermelon, cubed 
  • 1/2 red onion, sliced and cut in quarters 
  • 1/2 cup feta cheese, cubed 
  • 1/3 cup fresh mint, chopped 
  • 2-4 tablespoons balsamic vinegar or balsamic glaze 

Directions

  1. Place all ingredients in a large bowl and stir to combine! Serve cold. 

Serves 8
