Summer Mint and Quinoa Salad

A refreshing and light side dish or meal! 

Quinoa brings fiber and protein as does green peas. Feta, mint and lemon provide a bright flavor. 

Altogether, this dish provides a variety of nutrients, is delicious and extremely easy to make.   

Ingredients: 

  • 1 cup dry quinoa 
  • 2 cups water 
  • 10-12 oz bag of frozen peas 
  • 3 green onions (white and green parts), trimmed and sliced 
  • 2 tablespoons fresh lemon juice 
  • 2 tablespoons olive oil 
  • ½ teaspoon salt 
  • ½ teaspoon black pepper 
  • Large handful of mint, chopped 
  • 1/3 cup crumbled Feta cheese 

Directions: 

  1. Cook 1 cup of quinoa in 2 cups of water according to package directions or see below.*  Take off the lid, let cool for 15-20 minutes, stirring occasionally to release heat. 
  2. Take peas out of the freezer while quinoa is cooking 
  3. Once the quinoa has cooled, put all ingredients in a large bowl, stir well to combine. 
  4. Serve immediately or refrigerate for up to 3 days. 

*(Quinoa cooking directions: In a small pot, bring water to boil, add quinoa, turn down heat to low and let simmer for 15 minutes. Remove from heat and keep covered for 5 minutes.
