Baked Zucchini Caprese

Leftover zucchini?  Did your neighbor give you a bunch?  Here is a fun appetizer you can make.   

Zucchini is low in calories, high in fiber, vitamin c and has antioxidants that can help protect your eyes and more.  Add zucchini to stir fries, grilled vegetables, in salads or try this recipe! 

Ingredients: 

  • 1 medium zucchini, sliced into ½“ coins 
  • 3 T olive oil 
  • 3-4 tomatoes, sliced 
  • 8-10 slices fresh mozzarella 
  • 1 T balsamic vinegar 
  • Sea salt and pepper to taste 

 

Directions: 

  1. Preheat oven to 425 degrees 
  2. Cut zucchini into evenly sliced coins, about ½” thick 
  3. Brush both sides of zucchini coins and place on a baking sheet 
  4. Bake zucchini until medium-soft texture, about 6-8 minutes 
  5. Remove zucchini from oven, place baked zucchini on a fresh serving plate or pan 
  6. Top each zucchini coin with one slice tomato, one slice fresh mozzarella, one basil leaf, a drizzle of olive oil and balsamic vinegar, and top with a sprinkling of salt and pepper and serve! 
  7. Serves 4-6 people
