Make ahead egg and turkey casserole

Mornings can be so hectic! Try this make ahead casserole for breakfast. Made the night before, you can have it throughout the week. This high protein meal is ideal for sustained energy. Add your favorite vegetables or if you use what you have on hand, this is a good money saver. Feel free to exchange the seasoning to suit your taste. 

This calls for ½ pound of lean ground turkey. Make a whole pound and use the remainder for another dish such as tacos or meat sauce or freeze it for later. 

Egg and Turkey Casserole 

Ingredients: 

  • 1 teaspoon olive oil 
  • ½ pound lean ground turkey 
  • 1 tablespoon Italian seasoning 
  • 1 bell pepper, diced (any color) 
  • 1 onion, diced 
  • 2 handfuls of fresh spinach, chopped 
  • 12 eggs, beaten 
  • Salt and pepper to taste 

Directions: 

  1. Preheat oven to 350 degrees.
  2. In a large pan, heat olive oil over medium-high heat.
  3. Add ground turkey and Italian seasoning, sauté, breaking up the turkey, for about 5 minutes. Stirring frequently.
  4. Add the diced onions, bell pepper, stir to combine. Sauté for an additional 5 minutes or until vegetables are at desired consistency.
  5. Add chopped spinach and sauté for 1 minute.
  6. Coat a 9×13” pan with cooking spray, spread meat on the bottom.
  7. Pour eggs over meat mixture.
  8. Bake for 30 minutes or until cooked through.

 Tip: Add any vegetables you like. Try mushrooms, green onion, fresh garlic, tomatoes. Try Mexican seasonings and green chili. Add cheese for additional flavor.
