Perfect for fall and a healthy alternative to pie. You can try different apples; Fuji, Gala, Macintosh, Pink Lady or another favorite. These do not need to be peeled, which keeps it simple and the recipe is so easy.
Apples provide a variety of nutrients including fiber, Vitamin C, water and antioxidants that help fight inflammation.
Ingredients:
- 5 apples, cored and sliced
- 2 tablespoons of unsalted melted butter
- 2 tablespoons ground cinnamon
- ¼ cup chopped nuts such as pecans or walnuts
Directions:
- Preheat oven to 375 degrees
- In a large bowl, place apple slices
- Add melted butter, cinnamon and nuts, stir well to combine
- Place mixture in a 13×9 inch baking pan coated with cooking spray
- Bake in oven for 30-40 minutes (depending on thickness of apple slices) stirring at 10–15-minute intervals
- Remove from oven, let cool for 10 minutes and serve.
Options include a drizzle of honey or a scoop of vanilla Greek yogurt! Yum!
