Purple cabbage is a nutrient rich cruciferous vegetable. Benefits include antioxidants, nutrients that fight inflammation and compounds that help reduce heart disease risk.
But there’s more! It is high in fiber and a good source of Vitamins C, K, and A. It is low in calories and may help lower the risk of certain cancers.
Ingredients:
- 1/2 head of purple cabbage, shredded or chopped
- 1 red onion, thinly sliced
- 2 apples, cut into thin slices
- 6 tablespoons apple cider vinegar
- 6 tablespoons extra-virgin olive oil
- 1 teaspoon salt (or to taste)
Directions:
- Shred or chop purple cabbage into small pieces and red onion into thin slices, place in a large bowl.
- Cut apples into thin slices, add to bowl with cabbage mixture. Toss to combine.
- In a medium bowl, whisk apple cider vinegar, olive oil and salt.
- Pour over cabbage mixture and let sit for at least 30 minutes or even better- overnight to allow flavors to meld.
- Toss before serving.
