Purple cabbage slaw with apple

Purple cabbage is a nutrient rich cruciferous vegetable. Benefits include antioxidants, nutrients that fight inflammation and compounds that help reduce heart disease risk. 

But there’s more!  It is high in fiber and a good source of Vitamins C, K, and A. It is low in calories and may help lower the risk of certain cancers.    

Ingredients: 

  • 1/2 head of purple cabbage, shredded or chopped 
  • 1 red onion, thinly sliced 
  • 2 apples, cut into thin slices 
  • 6 tablespoons apple cider vinegar 
  • 6 tablespoons extra-virgin olive oil 
  • 1 teaspoon salt (or to taste) 

 Directions: 

  1. Shred or chop purple cabbage into small pieces and red onion into thin slices, place in a large bowl. 
  2. Cut apples into thin slices, add to bowl with cabbage mixture.  Toss to combine. 
  3. In a medium bowl, whisk apple cider vinegar, olive oil and salt. 
  4. Pour over cabbage mixture and let sit for at least 30 minutes or even better- overnight to allow flavors to meld. 
  5. Toss before serving.
