Easy carrot raisin salad

Time to bring a side dish to the BBQ! Try something different from the usual potato salad or coleslaw. 

It’s ready in no time, has simple ingredients and can be made a day ahead. Carrots are loaded with many nutrients including vitamin A, B vitamins, potassium and lutein. The nutrients in carrots provide an array of health benefits including eye health and may protect against several cancers. Raisins are naturally sweet and a good source of fiber, iron, calcium and antioxidants. When eaten in moderation, they can be good for your health, too! This is almost as easy as opening a bag of chips! 

Ingredients: 

¼ cup mayonnaise 

1 tablespoon honey 

1 tablespoon water 

1-2 teaspoons lemon juice 

4 cups shredded carrots 

1 cup raisins* 

Directions: 

  1. In a large bowl, place mayo, honey, water, and lemon juice. Whisk until smooth.
  2. Add carrots and raisins. Stir to combine.
  3. Cover and place in the refrigerator for 30 minutes or until ready to eat.

This can be made a day in advance. 

*Any combination of raisins, dried cranberries and walnuts are a delicious alternative.  

Serving size ½ cup
