Green cabbage stew
Just in time for St. Patrick’s Day! This is a very simple recipe that can be made quickly and is filled with healthy, nutrient-packed veggies. 10-15 minutes of prep, 30 minutes of cook time.
Ingredients:
1 tablespoon olive oil
1 medium onion, diced
2 celery stalks, sliced
½ medium cabbage, chopped
2 carrots, sliced
2 medium potatoes, chopped
1 teaspoon dried Italian seasoning (or ¼ tsp each: dried oregano, basil, thyme, rosemary)
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon paprika
2 cups broth (vegetable or chicken)
Salt and pepper to taste
Directions:
- Heat oil over medium-high in a large pot. *
- Add onions and sauté until soft, about 3 minutes.
- Add celery and garlic, sauté for 2 minutes.
- Add cabbage, carrots and potatoes, seasonings, and broth, stir to combine.
- Cover and bring to a boil. Reduce heat to simmer for 20-30 minutes or until potatoes are soft.
- Salt and pepper to taste.
*If adding stew meat or pork, do so at this point, cooking until browned, about 10-15 minutes. Drain any excess fat. Proceed to step 2, adding additional oil as needed.
