Asparagus season has started!

This vegetable has lots of nutrients such as Vitamins A, K, C and folate but few calories.   

Crustless quiche is an alternative to your typical quiche that uses pie crust. Leaving out the crust reduces carbohydrates and calories. You can add other vegetables, too, like onions, mushrooms, or spinach.   

To lower the fat, use half the cheese or cut it out completely. Quiche usually calls for heavy cream, so we are using whole milk instead.   

This recipe can be changed to your preferred ingredients and makes a wonderful addition to your Easter Brunch!  

Spring Asparagus Crustless Quiche 

Ingredients: 

  • 10 eggs, scrambled 
  • 1 ½ cups whole milk (cow, soy, lactaid) 
  • 1# asparagus, trimmed and cut into 1” pieces 
  • ½ teaspoon salt 
  • ¼ teaspoon black pepper 
  • 1 cup Swiss cheese, shredded 
  • 1 teaspoon Dijon mustard 

Directions: 

  1. Preheat oven to 375 degrees. 
  2. Heat the prepared asparagus for 2 minutes in the microwave or boiling water, dry thoroughly. 
  3. In a large bowl, vigorously whisk eggs.  Add milk, Dijon mustard, salt and pepper, stir to combine. 
  4. Add asparagus and Swiss cheese, mix well. 
  5. Pour mixture in a lightly greased 13×9” baking dish.   
  6. Bake in preheated over for approximately 45 minutes or until lightly browned and a toothpick comes out clean. 
  7. Serve with salad, yogurt and berries and homemade muffins for a delightful Easter Brunch!
