Heart Healthy, delicious Turkey Meatballs

Ingredients:

2 pounds ground turkey (90%-93% lean)

1 cup panko breadcrumbs

1 small onion, minced

1/2 cup fresh parsley, minced

2 eggs

3 cloves garlic, minced

2 teaspoon Worcestershire sauce

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 cup olive oil

 

 

Directions:

  1. Put all above ingredients in a large bowl except olive oil.
  2. Using your hands or latex gloves, mix well to combine.
  3. Line a baking sheet with foil and place wire rack on baking sheet.
  4. Spray rack with cooking spray.
  5. Shape turkey mixture into 1-2” balls and place on wire racks.
  6. Brush meatballs with olive oil.
  7. Bake at 400 degrees for 15-20 minutes, checking at 15 minutes for browning.
  8. (Internal temperature of poultry should be 165 degrees) Meat should be slightly golden/brown.
  9. Remove from wire rack and serve or freeze for up to one month.

 

If freezing, place on a baking sheet so meatballs do not touch, then freeze for one hour or longer. Once frozen, they can be bagged together.

Serve with your favorite tomato sauce over whole grain pasta, zoodles or spaghetti
