Do you find yourself with some leftover turkey after a holiday celebration?  Try this very basic and quick recipe.  You can also add onions, garlic, green peppers, and/or mushrooms to the turkey and cream cheese mixture for additional flavors and textures.  Adding a layer of leftover cranberry sauce will give this an extra Thanksgiving twist.

Ingredients:

  • 1 teaspoon olive oil
  • 3 cups leftover turkey, shredded
  • 1 brick (8oz) light cream cheese (also call Neufchatel cheese)
  • 2 15oz cans green chili enchilada sauce
  • 8 oz cheddar cheese, shredded
  • Corn tortillas

Directions:

  1. In a medium sized skillet, heat olive oil over medium.
  2. Add turkey and cream cheese and cook until melted, stirring frequently so cream cheese doesn’t burn.  Turn off heat.
  3. Put a small amount of green chili on the bottom of a 9×13 pan
  4. Layer corn tortillas, turkey/cream cheese mixture, green chili sauce and cheese.
  5. Top with a layer of corn tortilla, green chili sauce and cheese.
  6. Bake at 350 for 20-30 minutes or until bubbly.
