Do you find yourself with some leftover turkey after a holiday celebration? Try this very basic and quick recipe. You can also add onions, garlic, green peppers, and/or mushrooms to the turkey and cream cheese mixture for additional flavors and textures. Adding a layer of leftover cranberry sauce will give this an extra Thanksgiving twist.
Ingredients:
- 1 teaspoon olive oil
- 3 cups leftover turkey, shredded
- 1 brick (8oz) light cream cheese (also call Neufchatel cheese)
- 2 15oz cans green chili enchilada sauce
- 8 oz cheddar cheese, shredded
- Corn tortillas
Directions:
- In a medium sized skillet, heat olive oil over medium.
- Add turkey and cream cheese and cook until melted, stirring frequently so cream cheese doesn’t burn. Turn off heat.
- Put a small amount of green chili on the bottom of a 9×13 pan
- Layer corn tortillas, turkey/cream cheese mixture, green chili sauce and cheese.
- Top with a layer of corn tortilla, green chili sauce and cheese.
- Bake at 350 for 20-30 minutes or until bubbly.
