The spices make it “Spanish,” particularly the smoked paprika.
Try this meatless meal, it’s a great way to get your fiber and protein plus the veggies. One meat lover stated, “Wow, this is really good”!
Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 1 green pepper, diced
- 1 14.5oz can diced tomatoes
- 8 oz can tomato sauce
- 1 ½ teaspoon smoked paprika
- 2 ½ teaspoons cumin
- 3 cloves garlic, minced
- ¾ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper
- 1 15.5oz can chickpeas (garbanzo beans), rinsed and drained
- 12 oz frozen chopped spinach
Directions:
- Heat olive oil in large skillet.
- Add diced onion and sauté on medium-high heat for about 3 minutes, stirring frequently.
- Add diced peppers and sauté for an additional 3 minutes, stirring frequently.
- Add canned tomato, tomato sauce, smoked paprika, cumin, garlic, salt, pepper, cayenne pepper and chickpeas, stir to combine.
- Bring to a simmer, cover and let cook for about 15 minutes, stirring occasionally.
- Add frozen spinach, stir and cover. Continue to cook for an additional 10-15 minutes, stirring occasionally. Add more cayenne, salt and pepper as needed for taste.

*Serve over rice, barley or your favorite grain. If you like it spicy, add more cayenne.
