Healthy recipes: Spanish chickpea stew

The spices make it “Spanish,” particularly the smoked paprika.  

Try this meatless meal, it’s a great way to get your fiber and protein plus the veggies. One meat lover stated, “Wow, this is really good”! 

 

Ingredients: 

  • 1 tablespoon olive oil 
  • 1 onion, diced 
  • 1 green pepper, diced 
  • 1 14.5oz can diced tomatoes 
  • 8 oz can tomato sauce 
  • 1 ½ teaspoon smoked paprika 
  • 2 ½ teaspoons cumin 
  • 3 cloves garlic, minced 
  • ¾ teaspoon salt 
  • ½ teaspoon black pepper 
  • ¼ teaspoon cayenne pepper  
  • 1 15.5oz can chickpeas (garbanzo beans), rinsed and drained 
  • 12 oz frozen chopped spinach 

 

Directions: 

  1. Heat olive oil in large skillet.
  2. Add diced onion and sauté on medium-high heat for about 3 minutes, stirring frequently.
  3. Add diced peppers and sauté for an additional 3 minutes, stirring frequently.
  4. Add canned tomato, tomato sauce, smoked paprika, cumin, garlic, salt, pepper, cayenne pepper and chickpeas, stir to combine.
  5. Bring to a simmer, cover and let cook for about 15 minutes, stirring occasionally.
  6. Add frozen spinach, stir and cover. Continue to cook for an additional 10-15 minutes, stirring occasionally. Add more cayenne, salt and pepper as needed for taste.

 

Serves 6 

Nutrition per serving:  325 calories, 17.5g fat, 36.5g carbohydrates, 11g fiber, 12g protein 

*Serve over rice, barley or your favorite grain. If you like it spicy, add more cayenne. 

This can be a good meal prep and can stay in the fridge for 3-4 days.
