Summer greens with peaches, avocado and homemade vinaigrette: What a lovely combination to enjoy during the summer. With a variety of ingredients, but so simple to make, you can reap the benefits of all this summer produce! Feel free to add your favorites for your personal taste or with the change of season, try pomegranates, zucchini, walnuts, apples, gorgonzola.
Salad Ingredients:
1 peach, pitted and thinly sliced
1 avocado, pitted and diced
½ cup sliced almonds, (toasted optional-see below)
3oz Feta cheese, crumbled
½ red onion, thinly sliced
5 oz of your favorite salad greens (arugula, spinach, mixed greens), washed and completely dried
Balsamic Vinaigrette (see directions below)
Directions:
- Prepare the balsamic vinaigrette dressing.*
- Place salad greens in a large serving bowl.
- Toss with a small amount of dressing* about ¼ cup.
- Add the peaches, avocado, red onion, toss with salad to combine, add more dressing as needed.
- Top with the feta cheese and almonds, serve immediately.
* Balsamic Vinaigrette Ingredients:
- ½ cup extra-virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 2 cloves garlic
- Salt and pepper to taste
- Pinch of herbs such as basil, oregano, or thyme (optional)
Balsamic Vinaigrette directions:
Place all ingredients in a mason jar and shake vigorously to combine. May be stored in refrigerator for up to 10 days, simply take out of fridge, let rest for 10 minutes, shake and serve.
For toasted almonds: place them in a skillet over medium-low heat. Cook, stirring frequently until golden brown, about 3-4 minutes, let cool.
