Fresh summer slaws

Modify a classic recipe to fit your needs

From your classic coleslaw with shredded cabbage, carrots and dressing to ones made with pineapple, Brussels sprouts, or corn. A “slaw” is simply a salad of chopped veggies, typically with cabbage in a dressing that contains mayonnaise.  

Slaw is a great side dish for your summer grilling, to take to a BBQ, or to top a sandwich or burger.  This is a different take on the typical coleslaw and is so yummy and super healthy – enjoy!

Purple Cabbage with Kale

Ingredients

  • ½ medium purple cabbage, cored and thinly sliced
  • 2 carrots, peeled and shredded
  • 3 leaves of dinosaur (lacinato) kale or any kale you like, tough stems removed, then roughly chopped
  • ¼ cup sunflower seeds

Dressing

  • ¼ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. Place vegetable ingredients in a large bowl.
  2. Place the dressing ingredients in a jar with a tight-fitting lid and shake vigorously.
  3. Pour dressing onto veggies and let it marinate for 30 or more minutes to let the flavors meld and to soften kale.
  4. Top with sunflower seeds and stir to combine.
