There are many ways to use summer fruit. One way is to pair them together with ingredients that you might not think go together.
This recipe is very colorful, using only a few, yet distinct ingredients.
Did you know that cucumbers are technically fruit? This combination is quite delicious, healthy and goes well with grilled chicken or fish.
Ingredients
For the salad you will need:
- 4 ripe peaches, sliced (about 8 slices each)
- 1 cup fresh blueberries
- 4 mini cucumbers, sliced ¼” coins
- Small handful of fresh basil, sliced thin
- 6oz. feta, crumbled
For the dressing you will need:
- 2/3 cup olive oil
- 1/3 cup balsamic rose vinegar (can use white wine vinegar)
- 2 teaspoons lemon zest, grated finely
- 1 tsp Dijon mustard
- 2 shallots, finely chopped
- Salt to taste
Directions
- Place peaches, blueberries, and cucumbers in a large bowl.
- In a medium bowl, mix all dressing ingredients together, whisk vigorously.
- Pour dressing over peaches, blueberries, and cucumbers, stir to combine.
- Add basil and feta and gently toss to combine.
- Let sit for 15 minutes, serve, or keep in refrigerator for up to three days.
